Sounds like you've locked the display to one of the other modes. Specific directions for your model year on how to change that are in the owners manual. They're available online as a PDF for free

Primarily comes down to personal preference. It also depends on if you are looking for an LT1 powered car or the Z06. If pushed hard the Z needs cooling upgrades if auto equipped. I prefer the M7 for the driving experience.
