I would go with the bronze guides. Never heard of stainless guides. As for the valve seats you will not have a problem with any of them. Even the old leaded seats survive fine with unleaded gas. Towing is what kills seats, not normal driving.
The 2.25 have just a slight edge in flow. The disadvantage is the valve pocket in the top of the piston might need a bit of enlarging.
If you go with 2 .19 the pistons were cut for them and if the seats ever get rough you can go to the slightly oversize valve to salvage the heads.

Those rotors are gone. I replaced them with 14 inch rotors. I used an aluminum hat this time but did drill a pattern for looks and reduced weight.

I too have a blower and when reading plugs I run 2 different heat ranges. I would run one step colder plug in that cylinder.
Big blocks are bad for this. Some cylinders just seem to run leaner. I put a colder plug in those cylinders.
One more thing. It is easier to run a couple of flexible lines alot easier then a cable that must be secured so when you pull it it in turns pulls on the calipers.
