I've never seen NON-synthetic Rotella T 10W-30 ... but ... do typicially see NON-synthetic Rotella T in either multigrade 15W-40 or singlegrade 30W.

Quite likely you don't need a "performance" oil pan gasket.
FP also has 'replacement type' 1-pc rubber oil pan gasket.
Felpro p/n OS34510T is correct for 75 thru 85 sbc ... and it's a ONE-piece rubber gasket that also includes full set of new bolts & washers and the little plastic starter...

Whatever the max lift at spring is you MUST have an additional approx 0.060" to 0.075" it can compress to avoid coil bind. Does the .575 mean it can compress 575 and then 060 more until it becomes solid? or ... or does it mean .515 + .060 = .575??? Does it mean 1.800 spring is solid at 1.225" ...

Glad you found a machine shop so close. For what you're doing, you don't require a performance ms ... what's most important is using a good ms ... the 2 aren't always 1 in same ... check close ... drive a little further if need be...

If you were to pull your 78 motor out & put it on an engine dyno ... assuming it's it pretty good shape & in pretty good tune ... it'll probably make about 250 hp. Compare that to hp figures you see publicized for GM crate motors. Yes, true duals & no cat will help a lot...
Me thinks 383 partial engine ( GMPP p/n 12499106 ) will be a better match w/ 195cc runners. Your old flexplate that fits a '75 motor won't fit new 383 or even zz4-350 ... newer motors have a different bolt pattern. It will work (non-roller cam fit in roller block), but I echo what Bill says...
L48 has dished pistons ... L98 aka ZZ4 heads work real well with them with their 58cc chambers ... yes they have rather small runners about 163cc but that's fine for your 268 cam. Also, L98 heads fit your intake. L98/ZZ4 aluminum heads are very good quality ... they are GM p/n 12556463.

I like a street 383 ... lotsa bang for the $. Suggest you scrounge up a good used bare 350 block w/ bores that'll clean up at 0.030" over ... build it up as 383 ... most '86-up 350 blocks either have OE Roller Cam or are ready to fit OE RC ... lots more cheaper piston choices for 383...
Do some closer checking first ... if carpet etc is wet for ANY reason it'll haze the glass overnite ... ie leaking ttop/door gaskets will collect some water under carpet/seats ... some vaporizes in daytime... some condenses on cooled glass at nite ... hazed glass.

Send Qjet out to Lars Grimsrud for rebuild that's tuned for YOUR car. He's a CAC member & has a great reputation. You'll end up with a carb as good or better than new... for a bit less $ than new.
If you have iron manifolds ... and if you have the lower Vchannels ... and if not chasing originality ... suggest pulling off & storing Vchannels ... suggest running wires down back of block & under manifolds to 90* plug boots ... more or less like OE.
