Your oil pressure just fine, all within normal manufacture limits, I've always had a little higher oil press, been that way since I bought it new in 86.
FYI, I've always use 10w30 oil (book calls for 5w30), and a larger oil filter (PF35), instead of the smaller one GM put on it...

I have a 86 automatic, this time of year (winter) here's what I see:
1.) normal warmed up coolant temp- 174-181 range cruising
2.) normal warmed up oil temp- 185-190
3.) normal idle oil pressure 45-50, 3000 rpm 62-65
4.) Yes, you can and I think you should, under normal conditions...

Before the test, it was driven several miles (10-12), and waited in line with the motor running, temp was up around 200.

I just check my original window sticker, and build sheet, neither show a specific RPO for the perf ratio steering, which has me a bit confused.. maybe with the 3.07 rear, GM threw-in the perf steering ratio. What rear ratio do you have.?

I bought my 86 new, didn't pick from dealer stock, but ordered it with all the Z51 stuff which includes the following: heavy-duty radiator, engine oil cooler, radiator boost fan, bilstein shocks, 3:07 perf rear, and perf ratio steering....basically, it has all Z51 stuff EXCEPT for the stiffer...

Has anyone replaced your rear wheel bearings/hubs? I checked mine, with wheel off ground, hands at top and bottom of tire, and found some movement. I am thinking of replaced both rear hubs.
