Bench Bleed MC

Can someone explain what it means to "bench bleed" a master cylinder before installing? Anyone recommend any good reading material (articles) on the subject? Thanks!
 
1,Clamp the cylinder firmly in a bench vise so that the cylinder area is level
2, Connect the plastic fitting(s) and hose(s) to the MC and bend them back on themselves into the resevior(s)
3, Fill the resevior(s) with brake fluid.
4, Using a dowel pump the piston slowly untill you see no bubbles. (sometimes as many as 15 strokes)
