I am trying to find out how many Silver 1970 LT-1s were built. Did GM keep any records?

Yes and No. You may be able to determine how many 70s were painted Cortez Silver code 986, but there is not likely to be any confirmation of the break down between coupes and convertibles. There were 1287 LT-1s. GM did not keep records of how many LT-1s may have been silver or how many were coupes or convertibles.

To further cloud the issue, Laguna Gray (992) is a dark silver.

As stated above, GM kept no records of combinations of options. Anyone calming that their car is '1 of whatever' based on a combinations of options has simply guessed at it or applied some flawed statistical calculations.

My own car is apparently less than 1 of 1 if I put faith in the stats. ;)
