Engine Oil Cooler?

Okay my bro and I took our cars out for a night cruise. I am not sure about the duration of the drive but it was primarily country roads and the temp was in the mid sixty's. When we got home I asked him what his oil and coolant temp was when he pulled into the drive. He has an 87 with the Z52 I believe. I have an 86. Both being convertibles. Well his were 188 coolant, and 187 oil. He is running a 180 stat. Mine were 172 coolant, and 194 oil. I am running a 160. My question is that I know the cars are set up to run much hotter, and I have read all the literature, but why are some cars optioned with an oil cooler, and some are not? Dont be too harsh on the answer guys. Just something I thought up.

Yea, tonight after my hour or so drive i pulled into the driveway and the oil was 184 and my coolant was 186. If C4's run best at 230 or so why did they put oil coolers in some cars?
