Engine Temp What should it be

1999 LS1 Alum block and heads what should the running temp be at idle and under power and at what temp will the fan kick on thanks if you can help

Temperature ranges from 190-240.
Low fan speed kicks on at 208, high speed at 235.

Thanks for the temp range info.I have this engine in a hot rod just bought it never met owner or installer.I have dakota digitail gauges at 205 my gauge flashes and was climbing to 217 fan was wired to a dark blue or purple wire of comp is this the correct wire or can you tell me where i can get a wiring diagram on the net thanks
