After getting the oil and filter changed in my 81 corvette I note that the oil pressure is 60 on start up and up to 80+ when running. I asked the mechanic what oil he used and it was synthetic 15W40. Could this cause my oil pressure problem or do I need to look further.

What was the pressure before the change? Pressure that high might be caused by an inaccurate gauge or some previous owner having erroneously installing a high pressure pump.

BTW- using synthetic oil is a waste of money unless the extended change interval is taken advantage of.

I have the same psi with my rebuilt 350 using Rotella 15w40. Mechanical oil guage is dead on as well.

First thing I'd do is make sure your oil pressure sender and gauge are accurate.

What is the oil pressure, once the engine warms up?
