How carbs work

I was just over at howstuffworks.com and I was searching ALL over but I couldn't find anything technical about carbs and how they work. I'm really curious, mainly because I have one on my Vette , so I want to know how they were in real detail. Maybe they don't have it because carbs aren't really modern? :confused

Any idea where I could find a detailed source to teach me all about carbs and how they work and repair and modification of them?
