I have a 81 Corvette that has way to many wires for my liking. The guy i bought the car from had the motor changed to a 72 ss camaro block and my dad and I just rebuilt it. Its now a 355 4 barrel edelbrock 650 and HEI so my question is. Whats the best way to go about removing all the ugly old wires and has anyone done this before????

How many wires do you like?
:)

Sounds like the non-stock changes have negated the ECM. You should be able to unplug and remove what you do not need. Do you have the 81 assembly instruction manial (AIM)? The AIM shows the location and installation of the ECM, the wiring harness, and the miscellaneous connections under the hood.

If you have no intentions of going back to the ECM in the future, if your remove the package carefully, you might be able to sell it to someone who is looking for one.

I think you can remove them all or about all of them. First try to remove the airpump and all the hoses that go with them, second the EGR. After that let us know how many hoses you have left.
BTW. Be sure if you remove hoses from the carb to plug the vacuum openings. :)

The 81 has a harness just for the ECM. If you are no longer using it, the whole thing can be removed. Most of the wires on top of the 81 engine are ECM wires. The connectors go to the carb, dizzy, EGR, pressure sensors, airpump. once you find the bundle (comes through the firewall on the passenger side, most of the wires go in a bundle along the passenger side along the valve cover. remove the entire harness.
