When I bought my 75 convertible the previous owner had just converted to true dual exhaust and removed the cat. conv.. I can't tell you the difference because I didn't drive it the other way but I can tell you it sounds great. Not so much that I feel like a kid with a hot rod but like there is something under the hood that demands a turn of the head. The owner left the original exhaust manifolds in place and I suspect that because of extensive rust they will never come off unless I pull the engine and send the whole thing to a machine shop. They would probably have to be cut off and new threads tapped. I just pray that they hold together and I never have to take them off.
My suggestion, go with the headers and dual. You won't regret it.
