what makes the A/C cycle on and off and blow hot air then back to cold

1985 4+3 black cpe & 96 LT1 CE
96 CE LT1, when idling the A/C will recycle sorta on and off and blow hot air then back to cold then recycle back to hot air. Especially rough here in AZ when the past 2 days has been 105. Know its not low on Freon ( but maybe too much ? )

forgot to mention it only happens when I am stopped/idiling for more then 5-6 minutes

You need to start by checking the high and low side pressures when this occurs, which should be easy since it is only at idle. Make sure that the radiator and condenser fans are working properly, and that there is EXCELLENT air flow across the condenser and radiators with the fans on high speed. Make sure that the condenser and radiator are clean and debris free.
 
Actually I had put in too much Freon, got that fixed and things are good to go now
