Freshly painted body....new windshield....new weatherstrip.

The '67 Service Manual says to use sealant. Two local glass shops say, "No, don't."

Your professional opinion please.

IMO seal it now or have wet feet in the rain.

Yup, use sealant glass-to-rubber and rubber-to-body or you'll have leaks. Different recipe on a C1 - prefer not to use sealer on those subassemblies and installations except around the "T"-bolt holes.
