Ok, I'm sure this has been beaten to death elsewhere, but I just have to ask and get the answer myself.

My 96 runs around 190 degrees on the road while moving. When I stop at a light or anywhere and begin to idle, the temp slowly climbs until the fan kicks on around 225ish, and it begins to fall. I guess this is normal from what I'm reading??? This temp gauge moves back and forth and this is normal when idling???

My other vehicles (not vettes) all heat up to a certain temp and hold there, no matter what the outside temp or driving/idling conditions. So, this vette temp gauge movement continues to freak me out.

Again, please reassure me if this is normal...
 
It's normal.

You can alter the behavior of the cooling system somewhat by buying a handheld programmer which can reset fan-on temps.
 
Normal and it was designed for this. Your other vehicles do this as well you just do not notice it as much. No digital readout, less sensitive gauge, etc...I can guarantee your other stuff runs just as hot. Unless it is really old or been messed with.
