Well just did a trans service (half - converted not emptied) and a coolant flush. My average temperatures before were about 205, 213 for oil. Since the coolant system flush and fluid change I am not going over 195. Oil temp at about 205.
So I guess what I am trying to say is before you look to replacing that thermostat with a 160, which I have been told could be hazardous to your motor because the lower temperature won't burn off some coolant acids, flush the system. Besides replacing the fluids regularly is probably the most important thing you can do for you car's longevity and performance.

Your coolant temps really aren't out of line.

Regular cooling system maintenance is an important part of the general vehicle maintance. One of the biggest problems with keeping C4 coolant temps where they should be is keeping the radiator (and A/C condensor) clear of debris. C4's are "bottom breathers" in that all of the cooling air come in from underneath the car. Dirt, leaves, debris, small animals, Honda's and who knows what else can get sucked up in there and block the flow of cooling air.
Keeping the radiator clear can be done with a garden hose and nozzle by directing a stream of water from the back side of the radiator and forcing out all of the accumulated junk.

A thermostat with a lower opening temp does not alway help. The temp value of the thermostat determines at what temperature it opens not the temperature the engine will run at. If there are problems with the cooling system, a cooler 'stat doesn't solve the problem, it just lets coolant flow earlier. A good quality antifreeze, mixed in a 50% solution with distilled water and replaced every couple of years, goes a long way in keeping a cooling system healthy.

Engine coolant temps are high in today's motors because the higher temps help to reduce emissions. Temps in the 195 to 210 range are just fine with C4's.
 
Your temps are fine, but I know from experience that when my coolant is at 160, it runs better then it is at 190. I have Gteched it in the quarter mile, and it is 2 tenths or so lower when the coolant is 190. My brother has been running a 160 degree stat in his car for about three years now, and no problems. I am also running a 160 degree in mine with no problems.
