now that i've bybassed, what do i do with the incoming and out going holes in the throttle body?

You can either plug 'em with a cap from the hardware store, or you could simply leave them as is. The decision is yours, no harm will come with leaving it as-is. ;)

im a little afraid of any left over coolant inside the tb leaking out and onto the opti spark. if i leave it overnight, what are my chances of it evaperating.

There isn't anything difficult about removing the TB if you so desire, in order to remove all traces of moisture. You could blow through it with some compressed air if you want too. The moisture will evaporate in time, how much time is dependent on your climate I guess. ;)
