I have a 1957 block 3731548 with the stamping T62IG -
What does the "IG" suffix stand for?

It's not "IG" - it's just "G". '57-'59 block stampings only used one digit for January through September ("1" through "9", vs. "01" through "09" used from '60 on). The "T621G" says it's a '57 283/185hp 2-barrel Turboglide passenger car engine built June 21, 1957 at Tonawanda.

As a side note, this is the only V-8 engine combination Chevy ever built that has a crankshaft specific to the transmission it would get later; Turboglide crankshafts had a HUGE hole machined in the flywheel flange to accommodate the HUGE pilot on the Turboglide converter, and can't be used with a manual transmission (nobody makes a pilot bushing that large).

It should also be noted that you have a Tonawanda block.

In 57 all blocks were Flint/Saginaw cast blocks.

Tonawanda blocks have many embossed and debossed "T's" on them.

They're also missing the oil galley pipe plug on the front of the block.

What I'm saying is that you cannot make this look "Correct" for a 57 Corvette. You need a Flint/Saginaw casting.
