Is it possible to change the clutch pedal out on a 1970 coupe without removing the driver lower dash?

Good question, maybe it's not nessecery.

The reason is because the stud (on the clutch pedal), that connects the clutch pedal to the rod that goes through the firewall to the z bar, is nearly completely warn through. I'm about to go on a road trip, don't want the clutch pedal to fail while hundreds of miles from home.

I'm afraid that the stud is going to fail.

Nope. You'll have to remove both the steering column and the pedal support assembly in order to change the clutch pedal. See Section 5, "Removing Brake Pedal", in the Chassis Service Manual (to remove the brake pedal, you have to remove the clutch pedal, so that's why it's in that section).
