is fixed!!
Turns out with my luck that the master cylinder that I got was defective. Of course it was under warranty and so I got it replaced.
I want to thank everyone with their suggestions and help with this and I want to also give props to Corvettes of Houston who took care of me. They took the car in and tested the brakes, replaced the master cylinder, fixed the binding issue (stupid me forgot to ask what that was) and made sure that everything was up to spec all for 1 hour of labor! I'd definitely recommend them for service and they've earned my business if I run into another issue that I can't address.
I got her out on the road, she was dirty but still turned heads and the brakes now perform flawlessly!
Next step is to relplace the rusty exhaust and put a little more scoot in there too :)

yeah, it was a fun drive from the shop and then after a quick bath to get rid of the dust and grime went to get some pumpkins as an excuse for another quick jaunt.
Now to get it inspected and registered so I can drive it legally. :ohnoes
