Help! Newbie needs help!

I have a 1994 corvette Callaway Supernatural...383 motor...20,000 miles...I have a couple of questions...
(1) Does anyone know a good (qualified) mechanic that knows about Callaway motors in the Sacramento area?
(2) When I "step on it"...My engine hesitates then it sounds like it is backfiring through the carb...Then I get a puff of white smoke from the air filter...I don't know whether it has something to do with the timing or plugs or injectors...Any ideas???
