The analog oil temp gauge is not a true linear gauge. As the needle moves up the scale, the values get closer together much like some aftermarket water temp guages will read. I never really look at the analog oil temp guage. When I take my 92 out for track days, I'll bring up the oil temp guage on the digital display and watch the analog water temp guage.
If the guage needle does not return to the edge of the marking on the gauge when you turn the ignition to "OFF", you can remove the needle and reinstall it on the pin, but it's a lot of work in that you have to remove the entire cluster and take it apart. The needles are small and can easily get ruined.
There is only one oil temp sending unit and it's above the oil filter. The signal goes to the CCM and from there to the digital display and the analog guage.
