When we do our carpet we do the tunnel seperate and put it on first then you can have both sides connected in the middle over the hump. Then just have the main piece bound to finish of the edges. Then you will only have two pieces total and the carpet will lay nicer.

I read through quickly and I'm not sure if you ever got a measurement but here's mine regarding my '60. When I stick the tape down into the bottom of the windshield and measure out with the tape on the top side of the steering wheel it is 17.5" to the windshield side of the steering wheel. Also, with the stock speedo and wheel at my height (6'1") I can't see a single number on my speedo. I have to slouch down to see the numbers. I'm getting better at monitoring speed by the sound of the wind though.
