Spark plug Heat Shields

on a stock 1967 coupe. How critical/essential are they?

Are you referring to the static/radio interference shields?
 
the heat shields and the noise suppression shields are two separate things. Heat shields are item 14 on section 30 of this LIC page, the rest of the stuff is all ignition noise - U69 shields:

your radio delete cars would still get the heat shields . . . as for utility, the shields along with the proper plug wire retainer clips help keep the plug wires way from the exhaust manifold . . . .
 
The curved heat shields referenced above keep the plug wire boots from melting, and the chrome & stainless ignition shielding helps reduce ignition system-induced static in AM radio reception.
