Thermal or Non-Thermal

[Geek's 65]

So I went to pick up a fan clutch for my 65 327/300 and the list had both thermal and non-thermal. Other than the obvious, what's the difference? Why would there be a non-thermal if you want the fan when the car gets hot and not want it when it's cool?
