Tire size

Im going to replace my stock rims with some ZR-1 rims. I want to have the biggest tire possible on the rear without them sticking out past the fender. I would love to put 315's on the back but after reading some threads I found out they stick out about an inch. What is the biggest tire size I can go without any tire sticking out? I currently have 285's on the rear. I dont really know anything when it comes to tires and rims so any help would be great!

You could get fender flares like the GS's had, if you worry about the tires sticking out to far. I think the 315's would be worth putting flares on it.

11" wheels with 96 GS offset (50mm) will work with the 315's and not stick out.
Wheels with ZR1 offset (36mm) will stick out some - maybe 3/4 inch. On my ex-92 Vette, I used the ZR1 wheels, the GS flares and Altec splash guards and it gave the Vette an imposing look.

If you want to keep the tires under the stock fenders, go with an 11" wheel with a 50mm offset.

Is there any difference when it comes to a 36mm offset or a 50m offset?What I mean is will it look normal and not rub anywhere? I really know nothing when it comes to tires.

50-36=14mm => 0.55 inches That's the difference. The larger the offset, the farther the wheel sits under the car.

I ran the 36mm offset on my 92 and they stuck out but they never rubbed - my car was normal ride height also.
A wheel with a 50mm offset will be mostly under the car if not totally.

Here is a picture of a GS coupe with the 50mm offset

You can see that the 36mm wheel/tire combo sticks out a lot more than the 50mm combo.
I know several people that run the 50mm offset wheels without the flares and they can't complain.
