Currently I have a set of P225/70SR15’s. If I install the trailing arms with the 2” offset how much wider could you go on the rear tires and not worry about problems with the rear quarters also
would there be concern about additional bearing ware?

Keep in mind that the position of the wheel does not change with offset trailing arms. They simply allow for more "inside" width of the wheel/tire.

Fender clearance issues or bearing wear are not changed by offset trailing arms.

So if I gain 2" on the inside what size tire could I go to without
lifting the up the rear.

Thanks

Can't help you with a tire size for your C3 as my area of expertise ( :D ) is C2 Corvettes.

It will partially depend on wheel offset. There are other factors to consider like wheel diameter......staying with 15" or going larger.

Offset Trailing Arms

I have run the offset trailing arms for over 70K miles and use 275X60X15 tires with no clearance problems on the standard aluminum wheels. As to front tires, the 275s sometimes will rub very lightly when the wheel is all the way over, but this is a VERY slight rub and nothing to worry about. Go for either the Dunlop Sport Rover GTX or new Ecksta tires in this size...both are H-rated light truck tires and totally up-to-date, and are terrific in both wet and dry. I have run Sport Rovers for 17K miles. They are available from TireRack. Lots of tire places try and steer you to the Radial T/As, but these are OLD tech S-rated tires designed for trailer queens.
