Wondering what sensor is located between the 3rd and 4th plug, passenger side, just below/behind the exhaust manifold. It has one wire connected to it and screws into the Head looks like.

I think your looking at a temp sensor.. not sure if it is temp gauge or fan.

From the factory
On a '85 that is the over ride switch for the fan. On 86+ cars it is the sender unit for the temp gauge .On your car the gauge sender is in the drv side head

To expand on what OZ said, all 84 and early 85 Vettes used that temperature sender to trip the fan relay. Later cars' ECM had more capability and it took over the task.

Thanks for the additional input, I think I broke mine trying to put the exhaust manifolds back on.

'84 only had the mech switch ; no ECM control of fans.
'85 is a "one off " where the ECM controlled the fan via the CTS signal but it had the mentioned switch in parallel as a mech overide .I recall if the aux fan was optioned the switch controlled that only and there was no over-ride switch fitted
'86 - '89 had full ECM control of main fan but the aux fan (if fitted ) was operated by a mech switch in the drv side head
'90 + both fan from ECM control only ; no mech switches
