I am currently running a 160. However after the seminar at CAC cruise fest, Paul the C4C5specialist has persuaded me into a 180. This is due to something called thermal shock or something that he explained. Everything he said in support of the 180 made sense, so that is what i am going to do.

I'm using the 160. Have been for 10 years. I have a computer chip that turns on my fans sooner so I didn't want the fans and the thermostat fighting each other for control. Even on the coldest days in OK, I never see less than 175 after it is warmed up. On summer days, the temp while cruising is usually in the 185-190 range. I can't complain. I'll stick with the 160.
I think an aluminum head engine with 10.5/1 compression should run about 190-200 to let everything stay loosey-goosey and heat the oil. Using a Hypertech 180. I do agree however that the upper limit of 235 for the fan to kick in is a bit alarming. I will re-program one of these days. The thermo has nothing to do with that. The car needs a bigger, better radiator from factory to quell the mood swings and hot flashes.
honestly, the car won't run 160 with a 160 degree stat..... the reason why i use it is it opens up sooner, which tends to keep things cooler for longer... if you really want me to get into detail I will. Overall, the difference is not that much between 180 and 160.
