Why would my engine almost stall when I come to a quick stop, versus runs just fine when I come to a slow stop?

two things.
One, float level in your carb is too low, or off. When you stop hard the slosh of fuel causes it to stumble as it runs out of gas, or floods over the top of the bowl.
Two...(and least likely) a bad vacuum booster on your brakes that is allowing a vacuum leak when you nail it hard, making wide open vacuum through the manifold...which would make it want to stall.
I would check the carb first.
