What are the normal operating temperatures for oil and coolant in my 1994?

Good question, I too am wondering the same thing.
I live in Northern Cali, with an average of 77F. I have a 180 performance Thermostat in my 383 stroker and I run Royal Purple for Oil and noticed im averaging 220-240 OIL temp and 210-225 coolant temp.
I'd say the above is a bit on the high side for both, but considering the mods, if the car has a stock radiator and no EOC, then maybe they're typical.
As for what is the normal temp for a 94, it depends on how the car is driven, in what kind of weather it's being operated and a host of other factors relating to the condition and configuration of the cooling system.
For example, my 95 runs in the 175 to 190 range on the highway even in the hottest weather, but I have a bigger radiator, a lower temp thermostat, modified fan-on temps and straight water coolant. My oil temp is around 190 on the highway.
With respect to the question raised in the OP....that the question is asked implies you've seen higher temps than you'd like. What have been the observed coolant and oil temps from the digital display?
My 1989 has the L98, not the LT1 engine. So it may not be the direct answer you are looking for.
When I had a 195 degree thermostat, coolant temp would be in the 200 to 210 range and oil in the 210 to 220 range. With a 180 degree thermostat, coolant temp is now around 178-190, with oil temp 190 - 200. Even over the last few days of 88-90 degree heat, these coolant and engine temps are remaining in the same range. Check out the area in front of the radiator but behind the evaporator coil. C4s are bottom feeders and act like street vacuum cleaners. The stuff that builds up in amazing. I'm talking inches of it.
