Performance headers or Stock headers?

I plan to convert to a true dual exhaust on my 81 (remove the cat).

Should I keep the stock headers or are performance headers worth looking at. I've read some suggestions that the stock headers are worth keeping.
 
trash the stockers and go with true headers you will love the difference in power
 
We have done only half the job, but...

We took our old girl into an exhaust shop here in Australia and because we do not need to have the Cat reinstalled on pre 85 vehicles, it didn't go back on.
We did from the two pipe flanges, just after the end on the original headers. There is no equaliser pipe either. It is a true twin system. I noticed the difference straight away, both power and growl.
The wife doesn't like it though, she says it is a bit loud!

I mentioned that we may have to do the headers the other day, but I haven't told her about the extra 'note' it will add.

Go the hole hog and do the lot. They seem to breath a whole lot better and they sound like a small block chev should.
