I have seen valves like you were talking about for both fuel lines and brake lines. you can even go the JCWhitney route to buy them.
In brake systems they may be okay, in fact the one in JCW has a push pull activation, and is more suited for brakes.
You need a valve like a brass gate valve to work with gasoline, to eliminate the rubber seat. Rubber deteriorating and clogging your fuel injectors would put you in quite a mess now wouldn't it. Gate valve would be the only way to go with brass against brass, so there is no chance of spark.
A bored (1/4 turn) valve is not a safeway to use on a car because of the chance of the core becoming dislodged and fuel spewing all over the street, the underside and back of your car and then a stray spark igniting it all and making toastie bits out of your car and you.
