Will the 3M Wax Remover & the Clay Bar damage the stripes on a '78 S/A?

Are they painted on or are they adhesive?

Painted, no.

Adhesive, possibly.

They come in a kit , so they are Adhesive. I'm glad I asked. Which one might be hareful the 3M product or bar or both? Does anybody else know this??? Does the 3M stuff comes in a spray can only?

I use the 3M General Purpose Adhesive Cleaner in a can. If you are going to apply it to the surface prior to the pin-stripe, well, that is what you are supposed to do. If you are going to apply it with the pin-strip already on there it won't damage it unless there is prolonged exposure to it. The product 'flashes off' or evaporates rather quickly.

I see a lot of cars with pinstrips and I clay and dewax them all the same, but I go in the direction of the pinstrip.

It wouldn't hurt to give your vette a wash after the 3M GPAC to make sure you have all the residue.
