I am going to replace the headgaskets and I have some valve clatter, is there a way to tell if a lifter is dead?

First make sure oil is coming out of each push rod in an equal flow of oil. Next check for proper valve lash at the rockers. Maybe a loose rocker arm is causing this noise.

Could you have a broken spring ? Can you replace all with roller rockers?

sure!
if nothing is broken requiring the head to come off,. change springs, valve seals, and rockers/pushrods. Pulling roller-lifters means top end removal.

Theres lots of fun stuff that can be replaced under the baseplate.
