Do I need to remove the windshield trim to get the T bar that covers the top center support off?

What are you wanting to remove? T bar interior trim panel, or the entire T bar?

You may have to remove the windshield header interior trim panel to get to the front end of the T bar trim panel. You will definitely have to remove both if you are looking for the spot welds on the T bar.

The chromed t that is fastened and riveted on top of the coupe's center support.

My 72 had the chrome/stainless steel top piece that had 4 screws at the front nearest the windshield but a friend gave a t-bar from a 69 that had no screw holes and was just nicely buffed so I replaced mine. It came out without removing the windshield moulding and the new one went in with a bit of finessing but it would have been alot easier if I had removed that top piece of windshield trim.
