Can't see in your pic , at top center ,is there a bolt that connects the batwing to the diff head ?

Can install any SBC 4bbl intake and suitable size carb -

I glue one side of the gasket ( to the plenum and bottom of runners ) and grease the other side. That holds them in place while you move parts around and if you are lucky you can easily separate the runners and plenum at a later date without destroying the gaskets
Pull a couple of spark plugs
Wet - no or weak spark
Dry - no fuel
Dash lights being on could indicate a earthing problem ( seperate to starting problem )

BUT under low intake vac conditions like WOT , the crankcase fumes are pumped back up the PCV intake line from the pass side valve cover to the port on the TB ;
Hense the crud in the intake ( if engine is dodgy )

You can't " pump gas' on a EFI engine ; there is no accelerator pump like on a carb.

But check if you have a plug blocking one threaded hole between the spark plugs
If you do ,you want that one the drv side as the empty hole is for the temp gauge sender on pass side as shown below
PITA to get the plug out later it you swap heads to wrong side

As stated above, the CTS that the ECM uses for its calculations ( and the digital temp indication ) is located in the water pump
Gauge sender is in the head
Oil temp sender is located above the oil filter
Independent sources
Analog temp from the sender in the head ; digital temp from the CTS in the WP via the ECM
Check wiring tosender, ground the relevant wire at the sender and see if the gauge moves ?
If it does ,sender is most likely faulty
Or a wiring / connection fault from the VSS
Could try pulling the fault codes to see if anything present
